Pumpkin Muffins

This recipe is so easy and the muffins are delicious! I usually prepare the muffin batter and place into the refrigerator. Then the next day, I prepare and bake the muffins. You can keep the batter refrigerated for a few days. These muffins are very moist and stay fresh for a few days.

Cook Time: 25 Minutes
Total Time: 40 Minutes
Servings: 12

Ingredients:

  • 1 (18.25 ounce) package yellow cake mix
  • 1 (15 ounce) can pumpkin puree
  • 1/3 cup applesauce
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
  • *Can replace the cinnamon, nutmeg & cloves with 1 ¾ tsp pumpkin spice
  • Topping: brown sugar & oatmeal or granola

Instructions:

  1. Preheat oven 350 degrees.
    Grease a 12 cup muffin pan or line with paper liners.
    In a large mixing bowl, mix together cake mix, pumpkin puree, apple sauce, cinnamon, nutmeg and cloves until smooth. Using an ice cream scoop, scoop out the batter and place into each muffin cup.
    Sprinkle the top of each muffin with either brown sugar & oatmeal or granola.
    Bake 20-25 minutes until a toothpick inserted into the center of the muffin comes out clean.
