Broccoli & Cheese Quiche is one of the main savory dishes served here at Steeles Tavern Manor. It is a crustless quiche that is baked and served in individual ramekin dishes. The recipe is naturally gluten free and can be adapted for people with dairy issues by using soy or almond milk and dairy free cheese. And eliminate the ham for vegetarians.

- 3/4 cup chopped broccoli
- 8 large eggs
- 3/4 cup half-and-half
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/8 tsp nutmeg
- 1 cup shredded cheddar cheese
- 4 slices black forest ham or prosciutto
Preheat oven to 350 degrees.
Spray with PAM four 8-ounce ramekins and set aside.
Steam broccoli. Chop broccoli coarsely using the florets. Set aside. (You can prepare the broccoli the day before and refrigerate until ready to use.)
In a large bowl, whisk together eggs, half-and-half, salt, pepper, and nutmeg. Stir in chopped broccoli and cheese.
Place ramekins on a rimmed baking sheet. Place one slice of ham or prosciutto in each ramekin pressing the meat against the side of the ramekin. Ladle broccoli egg mixture into ramekins, dividing evenly.
Bake until tops are golden brown, approximately 25-30 minutes.
