In our December blog we explained what a great team of people we have working to keep Steeles Tavern Manor B&B and Alpine Hideaway Cottages clean and well maintained so you can have the best stay possible. In another blog, I detailed my experience making real Southern Biscuits with Louise’s recipe and her guiding hand. Since it’s apple season, I want to tell you about Shirley’s recipe for and help in making Southern Fried Apples.
Shirley, one of our wonderful housekeepers, just loves to suggest new, seasonal dishes for me to serve to our guests. Shirley’s sister happens to have apples trees on her property and is happy to share her bountiful crop with us. I have made apple muffins and apples strudel bread for guests’ breakfast sweets. The crop was so bountiful that I sliced and froze apples for use later this year.
This recipe makes a great side dish or the fried apples can be used as topping for French Toast, Pancakes, or Waffles. The apple-cinnamon aroma will fill your home with the scent of a warm welcome and some southern comfort.
SOUTHERN FRIED APPLES
- 1/4 cup bacon drippings
- 6 tart apples, peeled, cored, and sliced
- 1 teaspoon lemon juice
- 1/4 cup brown sugar
- 1/8 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 pinch ground nutmeg
In a large skillet, melt bacon drippings. Spread the apples evenly over the skillet bottom. Sprinkle the lemon juice over them, followed by the brown sugar and salt. Cover and cook over low heat for 15 minutes, until apples are tender and juicy. Sprinkle with cinnamon and nutmeg and serve. Optional: You can add a squeeze of lemon when finished.
